Abstract:This paper reviews the current status of the edible oil safety standard system. By comparing and analyzing the regulatory status of contaminants in edible oils between China and other countries or organizations such as the Codex Alimentarius Commission, the European Union, Singapore, Canada, and the United States, it provides references and a basis for improving China"s regulatory system for contaminants in edible oils. Secondly, a comparative analysis of major contaminants in edible oils, such as solvent residues, polycyclic aromatic hydrocarbons (PAHs), mycotoxins, heavy metals, 3-monochloropropane-1,2-diol esters (3-MCPD esters), and glycidyl esters (GEs), is conducted both domestically and internationally. This analysis provides necessary knowledge support for the edible oil industry to grasp domestic and international standard regulations and safety indicators, thereby facilitating the optimization of China"s regulatory and standard system for contaminants in edible oils.
