    摘要:

    近年来,食品欺诈事件频繁发生,并遍及全球,这不仅损害了消费者的利益,也对维护食品供应链的秩序产生威胁。在食品欺诈脆弱性评估基础上,有针对性地开展食品真实性防护,是缓解欺诈的一个重要手段,可以应用于食品供应链的任何一个环节。因此,本文综述了供应链环节中不同类型食品欺诈的发生、供应链发生欺诈的因素、以及介绍了食品欺诈脆弱性及其四种评估工具,并阐述了目前食品欺诈脆弱性评估在白酒、香料、大米、橄榄油、牛奶等食品中的应用,最后提出了下一步工作方向以及食品安全工作重点将向构建食品真实性体系发展的展望,旨在营造更好的食品环境,推动供应链的健康发展。

    Abstract:

    In recent years, food fraud has occurred frequently and spread all over the world, which not only damages the interests of consumers, but also threatens to maintain the order of the food supply chain. Based on the vulnerability assessment of food fraud, targeted food authenticity protection is an important means to mitigate fraud, which can be applied to any link of the food supply chain. Therefore, this paper summarizes the occurrence of different types of food fraud in the supply chain, the factors of supply chain fraud, introduces the vulnerability of food fraud and its four assessment tools, and expounds the current application of food fraud vulnerability assessment in liquor, spices, rice, olive oil, milk and other foods, and finally puts forward next work direction and the focus of food safety work on the construction of food authenticity system The vision of the exhibition aims to create a better food environment and promote the healthy development of the supply chain.
