Abstract:To find out the aluminum content of some common flour foods in Nanning, search the influencing factors and provide basis for the regulatory authorities to develop control measures. Methods 28crullers, 32cakes and 10pieces of puffed food were randomly collected from the retail stores of hotels, schools, and booths and then tested and evaluated. ResultsThe aluminum content of three common flour foods was in the range of 42.8-1206mg/kg, and the average was 336.7mg/kg. The aluminum content of 90% cruller was in the range of 320-1206mg/kg. The overall over standard rate of the three flour foods was 60%, and was 92.9%, 46.9% and 10.0% for cruller, cakes and puffed food, respectively. The over standard rate of cruller and cakes from retail stores of hotels, schools and booths was 65.8% (25/38), 53.8% (7/13) and 100.0% (9/9), respectively. The on-site products had a higher aluminum content than the prepackaged puffed food. Conclusion The aluminum content of flour foods in Nanning was seriously over standard, and further actions to strengthen food safety supervision was highly recommended.
