Grape seed proncyanidins extract (GSPE) has been used widely in the fields of foods, medicines and cosmetics because of its remarkable bioacitivities,such as antioxidant property, cardiovascular protective action, antimutagenic action, et al. In this view, the research progress in its structure, preparation, determination methods, biological acitivities and safety were summarized, and its application and problems in Chinese health foods were also analyzed.
