    Abstract:

    The Nation,al Food Safety Stan,dard Modijied Milk ( GB 25191-2010) was one of 66 standards in the first set of National Food Safety Standards issued by the Ministry of Health of the People' s Republic of China on March 26 , 2010, which introduced a new concept of "modified milk" not being used before in China. The importance and the role of introducing the new concept into the National Food Safety Standard system were discussecl from different angles, suc:h as the related International Standards, processing techniques, food adclitives, as well as the development of dairy industries and the existing contradictions and problerus today in China.
