    摘要:

    为了解广东省生吃水产品以及生吃水产品养殖水等中常见病原性生物的污染情况,从1999年6月至2000年12月,对广东省18家酒店的生食生产品、养殖水和砧板进行卫生检验。结果从325份样品中,检出常见病原菌79株,包括7种致病菌,检出阳性率为24.31%,其中罗氏虾的阳性率高达50%。另外25份生鱼肉中的5份检出华支睾吸虫,检出率为20%。结果显示广东省生吃水产品中普遍存在常见病原性生物的污染,是食用后引起腹泻等肠胃不适症状以及相关疾病发病率增加的重要原因,应该加强食品卫生管理和食用安全性研究。

    Abstract:

    In order to know the contaminative level of common pathogenic organism in raw seafoods,raw breeding water of seafoods and other samples in Guangdong province. 325 samples were collected and studied by the national hygienic standard and traditional scientific methods. Results showed that there were 79 common pathogenic microorganisms, including 7 biological species. The positive rate was 24 31%, especially that of Luoshi shrimp was 50%; Otherwise, there were clonorchis endemicus in 5 samples among 25 raw fishes. The positive rate was 20%. Results indicated that it was prevalent to pollute for common pathogenic organism in raw seafoods in Guangdong province. It was important factor to increase the incidence of diarrhea and other correlative diseases after eated. And so it was necessary to enhance the study of food hygienic control and food safety.
